Colossal Stuffed Chocolate Chip Cookie
Ingredients
- ½ cup white sugar
- ¾ cup plus 2 teaspoon packed brown sugar
- ½ cup unsalted butter, melted
- ½ teaspoon kosher salt
- 1 whole egg
- 1 egg yolk
- 2 teaspoons vanilla extract
- 1 ½ cup all-purpose flour
- ½ teaspoon baking soda
- 7 oz chocolate chips
- Stuffing of choice (marshmallow fluff, Nutella, peanut butter, etc.)
Directions
- Melt the butter
- In a stand mixer with paddle attachment, mix the brown sugar and white sugar on low speed.
- Add the melted butter and combine.
- Add the whole egg.
- Increase mixer speed to medium and add egg yolk.
- Add vanilla extract.
- Add the flour, salt, and baking soda.
- Fold in the chocolate chunks.
- Let rest overnight. You can also store the stuffing in the fridge so it’s easier to work with later.
- Preheat oven to 350 degrees.
- Roll out cookie dough into desired size.
- Add 1 tablespoon of stuffing to the center of each dough round, covering completely with dough.
- Depending on the size of the cookie, cook for 8-15 minutes total.
- After cooking for 6 minutes, pick up the pan and drop it back on the rack (this helps stop the rise of the cookie, resulting in a chewier cookie).
- Cook 3 more minutes then drop pan again.
- Finish cooking the cookies.
- Cool and enjoy.
